The team makes deliberate, daily decisions to reduce environmental impact – limiting food miles, eliminating waste, and conserving energy and water. Executive Head Chef Noel Enright and his team design menus around the best produce from local suppliers, changing as the seasons turn. This is true ingredient-led modern cuisine, where each dish is an original creation built on what is freshest that day. Breakfast is served each morning, cooked to order, while dinner runs Wednesday to Sunday. On the first Sunday of each month, Head Pastry Chef and Chocolatier Dinesh Mauree presents a refined Afternoon Tea with delicate savouries and indulgent treats.
