The story
At the foot of the Gran Paradiso massif, Bar à Fromage brings the spirit of the mountains to the table. The restaurant is part of the Bellevue Hotel & Spa, yet it stands on its own as a destination for those who seek the real tastes of the Valle d’Aosta. The dining room wraps around a central hearth, with wide windows looking out onto the meadow of Sant’Orso. Inside, antique butter moulds and tools from the artisanal dairy tradition are displayed – a reminder that here, cheese is the undisputed protagonist.
The kitchen draws directly from the region’s mountain heritage, especially the customs of Cogne. Slow cooking at low temperatures, clear aromas, and the invitation to touch food with your hands define the experience. The menu is a short, honest list of local classics. Among the standouts: L’orto croccante – crisp garden vegetables in a light anchovy sauce; La Favô, a traditional Valdostan soup; and the inevitable Raclette, served in the proper way. The Potence, a dish cooked on a vertical spit, and a Zabajone made with Moscato d’Alba and Marsala finish the meal on a high note.
