Chef Marco Stefenelli’s Philosophy

“My cooking philosophy reflects my life philosophy: contrasts and harmonies, in constant search of balance.” This line, from the restaurant’s own website, sums up the approach at Stefenelli Desk. Chef Marco Stefenelli’s path took him from the Valle d’Aosta to northern Germany (Bonn, then Lake Constance), through Ireland, and back to his home region. The result is a cuisine that blends local ingredients with techniques and flavours gathered along the way — a modern, Italian contemporary style that earned the restaurant a Michelin Recommended distinction.

The Setting

Stefenelli Desk occupies a narrow alley in Aosta’s historic centre, inside a building dating to 1772. The restoration was careful: wood, stone, and glass are combined harmoniously. During the Millenary Fair of Sant’Orso, the cellar doors were once opened to visitors — a nod to the building’s past. Today, two dining rooms seat about forty guests. One is more modern, with a bistro feel; the other is elegant and refined, with a vaulted ceiling and stone columns that make the space intimate. The atmosphere sits between ancient and contemporary.

The Food

The menu changes seasonally, but some dishes stand out from the website. A sockeye salmon with lobster and cognac sauce, mint pea purée. Rack of lamb with aromatic herbs. Warm veal tongue on a crouton, with Cantabrian anchovy, caper flower, and Tropea onion sorbet. A crispy poached egg with potato and fontina fondue, black truffle perlage, Parmesan crisp. Alpine char with raw mushrooms, beetroot air, toasted pine nuts, and pine oil. Fassona beef tartare with orange powder, mustard ice cream, Oscietra caviar, and oxtail broth jelly. Ombrina fillet with Taggiasca olive cream, tomato and basil sauce, zucchini salad. Each dish shows Stefenelli’s search for balance: earthy, acidic, rich, and fresh in one plate.

The Wine and Service

The wine list gives ample space to Valle d’Aosta producers like Anselmet, Les Crêtes, La Plantze, and Elio Ottin, alongside top Italian names from Gaja to Donnafugata. The dining room is led by Sandra Perrod, who describes her role as “a link between the kitchen and the guests, attentive without being intrusive.” The result is a restaurant that feels personal, serious, and welcoming — a place where modern Italian cooking is rooted in place and story.
