The story
Since 2003, Il Tirabusciò has occupied an ancient palazzo in the historic center of Bibbiena, in the Casentino valley. Here, Alberto and Marinella welcome guests into a small, intimate space of about twenty-four seats divided across two rooms. The cooking is what they call “cucina di territorio” – cuisine of the territory – expressed in a contemporary key and following the rhythm of the seasons.
This approach earned the restaurant a Michelin Bib Gourmand for 2026, a recognition of good quality, good value cooking. It is a natural fit: the kitchen relies on exceptional local products, especially from Casentino, alongside several Slow Food presidia that have long defined their philosophy.
The menu changes regularly, but the signature dishes speak clearly of the landscape. A battuta of Chianina IGP beef is served with an anchovy sauce, capers from Salina, and the restaurant’s own giardiniera. Pigeon breasts are roasted, the legs stuffed with its liver and crisped. A tortino of local pecorino comes with caramelised pear and crumble of Noto almonds. The wine list is exclusively Tuscan and Casentinese, chosen to accompany each plate.
Il Tirabusciò is a place where tradition and modernity meet without fanfare – just honest, seasonal cooking that lets the valley’s best ingredients speak for themselves.
