Perched at 2,275 meters on Plan de Corones, AlpiNN by Norbert Niederkofler describes itself as a “living room in the mountains.” It is a space where food takes center stage and the act of sharing a meal becomes a moment of total connection. The restaurant was conceived as a cultural concept, born from the collaboration of three distinct visions: the innovative spirit of chef Norbert Niederkofler, the international design perspective of Martino Gamper, and the artistic character that the Plan de Corones region has embraced.
At the heart of AlpiNN is the “Cook the Mountain” philosophy, a working and life principle developed by Norbert Niederkofler. After traveling the world, the chef turned his focus back to his roots and his territory, making sustainability and locality the pillars of his cooking. The approach explores the values that link mountain communities globally—tradition, resourcefulness, and preservation—and connects them with cuisine and gastronomy from around the world. At AlpiNN, this philosophy has found its natural home.
The restaurant’s seasonal Alpine cuisine draws on a network of small-scale producers and breeders, described as “artisans of the territory.” These are the people who, with daily dedication, protect the land and its products. They are given a direct voice and space to showcase their authentic values, reinforcing the bond between producer, product, and plate.
The dining experience is enhanced by a partnership with BWT, whose Diamond Mineralized Water is treated locally with magnesium and silicate, reducing CO2 emissions by up to 90% compared to bottled water. This collaboration underscores AlpiNN’s commitment to quality and environmental respect.
