"I want to inspire the world with the spark of ethical cuisine, in order to change the way we eat, collaborate and live." That sentence, in Norbert Niederkofler's own words, is the clearest possible statement of intent for Atelier Moessmer. The restaurant is the fullest expression of his "Cook the Mountain" philosophy – a rigorous commitment to hyper-local Tyrolean terroir that he has been refining for over a decade. Every ingredient on the plate must come from the mountains and valleys of South Tyrol. The result is mountain cuisine that earned Atelier Moessmer a place at number 20 in the World's 50 Best Restaurants 2025, a recognition that reflects both the kitchen's technical ambition and the depth of its ethical framework.

The House and Its History

The setting matters here. Atelier Moessmer occupies a 19th-century villa that was once part of the Moessmer textile complex – the oldest industrial concern in the Puster Valley, founded in 1894. The collaboration between Niederkofler and Moessmer Woolen Mill President Paul Oberrauch brought the space back to life in 2023, pairing a carefully preserved historic fabric with a modernist glass-walled extension that houses the open kitchen and counter seating. The result is a space where, as the restaurant puts it, "history, passion, innovation and respect find a perfect balance."

Guests don't simply walk in. They ring a doorbell. That detail sets the tone immediately – this is a private house, not a dining room, and the feeling throughout is deliberately domestic.

The Team Behind the Counter

Niederkofler's presence shapes everything at Atelier Moessmer, but the daily rhythm of the kitchen and dining room is led by executive chef Mauro Siega and restaurant manager and wine director Lukas Gerges – two collaborators Niederkofler describes as having been "by my side in this adventure for several years." The wider team is young, and guests are guided through the meal with a calibrated warmth that judges exactly how much to explain and when to simply let the food speak.

Moving Through the Villa

The experience unfolds across multiple rooms rather than a single dining space. Snacks begin in the bar-lounge; courses follow in the salon, on the veranda with its park views, and in a library where Niederkofler's private book collection lines the shelves before dessert arrives. The open kitchen counter offers a more direct, immersive perspective on the cooking. No more than thirty guests are seated at any one time.

What Arrives at the Table

The 12-course "Cook the Mountain" tasting menu changes with the seasons and the availability of ingredients. Dish names are deliberately plain – Spring Salad, Tyrolean Beef, Mountain Cheesecake – but the simplicity of the names belies serious technique and considered flavour. Three signatures can be added to any menu: White Fish Tartare, Beetroot Gnocchi, and Tarte Tatin, each priced at €40 per person. The full tasting menu is €320 without beverages, with wine pairing at €220 and an alcohol-free pairing at €160.

Beyond the Restaurant

Niederkofler's Cook the Mountain ethos extends well beyond Brunico. He founded Care, an annual event focused on ethical cooking; helped shape a gastronomy degree at the University of Bolzano; runs an academy training young chefs in Saudi Arabia; and is actively campaigning for reform of school meals across Italy. The philosophy that drives the kitchen at Atelier Moessmer is, in his own framing, "a handbook for rethinking economic and social development" – one that starts with what grows on the mountain and reaches considerably further.

Norbert Niedekofler was the first chef to win three Michelin stars in South Tyrol, but above all, he was the first to make a revolutionary intellectual gesture. He taught how to “cook the mountain” through contemporary stylistic elements, codifying its form and flavor. Today, his “Cook The Mountain” philosophy is already known worldwide as an ethical culinary concept centered on menu seasonality, respect for Nature’s cycles, and the skillful use of scraps. After the splendor of St. Hubertus in San Cassiano, for the past two years Niedekofler has relocated to the elegant spaces of Atelier Moessmer in Brunico, a historic villa owned by the eponymous wool mill that manufactured loden garments for Emperor Franz Joseph. It is a return home, as Niedekofler hails from the Aurina Valley, located just a short distance from Brunico. At the Atelier, guests can dine in the rooms adjacent to the Moessmer family’s historic library, alongside volumes dating back to the Austrian Tyrol era, or at the ultra-modern omakase counter set up in front of the kitchen headed by sous chef Mauro Siega. The menu is unique and seasonal, varying according to the availability of natural, ethical, zero-kilometer products. During the winter months, preserves and ferments from spring and summer harvests are used. Wild herbs, roots, berries, drupes, and mushrooms accompany char, trout, sheep, lambs, and free-range or semi-free-range grey cattle. In a culinary journey that may recall – at times – certain Scandinavian experiences, one can start with a salad of seasonal vegetables and fruits, such as green apple, wood sorrel, lemon balm, mushrooms, currants, rowan, and savory variations on the theme; continue with trout cooked all’acquapazza with cornelian cherry, gooseberry, and tomato water; and proceed with risotto made with buttermilk, sour butter, hay, and mountain herbs. A large Basque-style grill elevates lambs raised at two thousand meters and game animals hunted at high altitude. There is always the option to add Niedekofler’s great classics to the menu: whitefish tartare, red turnip gnocchi, and tarte tatin.
