At Mia Ristorante in Castel del Giudice, Chef Marco Pasquarelli crafts a dining experience that draws a direct line from the kitchen to the art world. The name itself nods to artistic icons—Mia Wallace, Mia Martini—setting the stage for a meal that engages all the senses.
After two years leading the main restaurant at Borgotufi Albergo Diffuso, Chef Pasquarelli has opened his own space. His cooking is creative and playful, focusing on the chromatic nuances of each ingredient. He champions local, seasonal products and the recipes of his homeland, which straddles the border between Molise and Abruzzo. This new restaurant, which has earned a Michelin Recommended distinction, marks a new evolution in his culinary expression.
The tasting menu is a journey through the region’s finest, presented with modern flair. The degustazione (5 courses, €70) might begin with marinated beef, turnip, mustard, and hazelnut, or a poached egg with asparagus, pecorino, and bread. First courses include a lamb tortello with saffron and caciocavallo, and a risotto with beetroot, lime, and licorice. Main courses feature suckling pig with chard and apple, or lamb with peas and lemon, each dish a balanced composition of flavor and color. Desserts like the hazelnut and peach or the classic tiramisu close the meal on a refined note.
