The story
Just outside Soragna, in the heart of Parma’s countryside, Locanda Stella d'Oro has been welcoming guests since the late 1800s. This locanda e trattoria, recommended by the Michelin guide, combines a warm, elegant atmosphere—with carpets, an internal cloister, and a sheltered outdoor terrace—with the serious cooking of Chef Marco Dallabona.
The menu is rooted in Emilian tradition, reimagined with precision. It begins with cured meats: the chef’s personally selected and aged culatello, or a foie gras d’oca in terrina with fig compote and saba. Hand-cut tartare of Fassone beef and horse comes with crisp wafers and horseradish. Pasta is a highlight: pappardelle with fresh salami and a crown of fonduta, ricotta-and-herb tortelli with butter and Parmigiano Reggiano, or the classic anolini of the Bassa in a rich broth of boiled meats.
Main courses continue the regional focus—filetto rosa di Parma with malvasia and black truffle, a Cinta Senese suckling pig glazed with thyme, or a delicate guinea fowl caramelised with balsamic vinegar. Seafood dishes appear too, such as rombo (turbot) poached with artichokes and a potato foam. The cheese trolley features local cow, goat, and sheep selections with house-made mostarde.
Desserts include a millefeuille with vanilla cream and raspberries, a warm zabaglione, and a seasonal chestnut mousse with persimmon gelée. The wine list is deep in local Emilia-Romagna labels—Lambrusco, Malvasia, and Fortana—with a selection of half-bottles and sweet wines to pair with the final courses.
