This is the setting for a kitchen led by Executive Chef Pasquale D’Ambrosio, who brings a modern sensibility to Italian cuisine rooted in the island’s culinary traditions.
Chef D’Ambrosio’s cooking is built around genuine, locally sourced ingredients. He favours techniques that preserve freshness and quality, letting the natural character of Sardinian produce shine. The result is a refined take on Italian cuisine, where traditional aromas meet contemporary precision. The menu changes with the seasons, always anchored in the Mediterranean larder.
The cellar holds over 300 labels – local, Italian and international – with many top vintages represented. Service is attentive but unobtrusive, in keeping with the resort’s relaxed elegance. The dress code is smart casual, and the restaurant opens each evening from 19:00 to 22:30. Capogiro earned its first Michelin star in 2026, recognition of a dining experience that balances sophistication with a genuine sense of place.
