The story
For a decade, Primo Restaurant has been a fixed point on Lecce’s dining scene, operating from the same address on Via 47° Reggimento Fanteria. In 2026, that consistency and quality earned it a Michelin star, a recognition of its refined take on contemporary Mediterranean cuisine.
Chef Solaika Marrocco leads the kitchen, and her cooking is rooted in the Salento territory. The restaurant’s tenth anniversary is marked by a special tasting menu called "Dieci Volte Primo" – a sequence of dishes that revisits signatures from each of the past ten years. It is a deliberate, personal retrospective: a dish of snails with onion cream and bay leaf from 2022, veal sweetbread glazed with orange and paired with raw Gallipoli red prawns from 2019, and a 2017 classic of suckling pig belly with broad beans and chicory. The menu is presented as a fixed narrative, a succession of complex preparations where each course is essential to the whole.
For those who prefer to build their own meal, the "Primo alla Carta" selection gathers the dishes guests have made into signatures over the years. Here you find a pasta al pomodoro with yellow tomato, oregano, and caramelised chilli, a raviolo filled with scapece (the local marinated fish specialty) with anchovies and saffron beurre blanc, and a tagliatella with octopus sauce and lemon. A seven-course surprise menu, "Ci Vediamo Da Noi," offers a more spontaneous expression of the kitchen’s daily style, and a vegetarian version is available on request.
The atmosphere is one of focused hospitality. The restaurant accommodates dietary needs with advance notice, particularly for its vegetarian path, but the core tasting menu is presented as a complete, unalterable experience. With its Michelin star and a decade of evolution, Primo stands as a confident, quietly ambitious address in the heart of Lecce.
