Chef Pino Cuttaia’s kitchen is rooted in a singular ingredient: memory. “Ognuno dei miei piatti contiene sempre almeno un pizzico di ricordi,” he says – each dish carries a pinch of recollection. At La Madia, awarded two Michelin stars, that philosophy transforms into plates that reference childhood games, everyday Sicilian life, and images from a black-and-white postcard of a radiant, older Sicily. The cuisine is deeply Sicilian, yet expressed through Cuttaia’s personal grammar of flavor and technique.

Tasting the territory

The restaurant offers several tasting paths. L’Illusione (€150) moves from a “pizzaiola” and a “scampagnata di una melanzana” to Nero dei Nebrodi pork glazed with Sunday sauce. Il mare inaspettato (€170) dives into coastal Sicily with dishes like Gambero di nassa in salsa cocktail, Quadro di alici, and a changing Pescato del giorno. The Scala dei Turchi menu (€190) bridges land and sea, narrating the territory in six courses. Each degustazione comes with a curated wine pairing.

À la carte options include creme brulèe di polpo, caldo mare, a lasagnetta finocchietto e alici, and a filetto di manzo lisciato all’olio di cenere. Prices range from €30 to €50 per dish, reflecting precision and quality.

Balance governs every dish, maintaining an immediate clarity that makes his cuisine straightforward while remaining at an exceptionally high level. Three tasting menus are offered: L'Illusione (€150), Il mare inaspettato (€170), and Scala dei Turchi (€190)—three culinary journeys that clearly articulate the chef’s vision.
