The story
At Oltremare, chef Alfonso Crisci works from a simple conviction: “My cuisine is innovative, but tied to tradition. An apparent oxymoron that I resolve by studying the typical dishes of my land with care and interest, reinterpreting them in an original and surprising way.” The result is contemporary Mediterranean cooking that respects the ingredient first. Seasonal, zero-kilometre produce and local recipes are the foundation for dishes that feel both familiar and fresh.
The menu – a tasting journey inspired by the nearby fishing village of Cetara – shows this approach in action. Anchovies lightly matured with whey and blueberry vinaigrette, squid cooked with ultrasound, linguine with seven herbs and red shrimp garum: each plate is layered and precise, yet grounded in the flavours of the coast.
Oltremare sits on the fifth floor of the Hotel club Due Torri in Maiori, looking out over the Amalfi Coast. The dining room is modern, elegant, and immersive – designed so that the line between kitchen and guest fades. “Every dish should be enjoyed with all the senses,” the restaurant notes, and the view, with its endless horizon, is part of that experience.
The Michelin Guide Italia 2024 describes Crisci’s cooking as “complex and always rich in different ingredients and colours, with a selection of delicious and generous desserts to complete the meal.” That recognition – alongside mentions in L’Espresso’s guide and the We’re Smart Green Guide – reflects a kitchen that balances technical skill with genuine love for the land. Oltremare, as the name suggests, is about looking beyond the sea, bringing passion and culture to the table through the timeless tastes of the Amalfi tradition.
