The story
Radimare is chef Domenico Ungaro’s personal project in Monopoli, a coastal town on the edge of the Itria Valley in Puglia. After years working in starred kitchens across Italy, Ungaro returned to his homeland to open a restaurant that speaks of his origins and his craft.
Ungaro describes his cuisine as a dialogue between Mediterranean tradition and daring experimentation. Order and precision are central to his method. He lets the ingredient lead: only what is local and in season finds its way onto the plate. The result is contemporary cuisine with clear, decisive flavours – a direct translation of his philosophy.
