The story
Everything began in 1930 with the passion of Nonno Augusto. First came the macelleria, where Giacomo – known as “Il Maialetto” – learned to work meat with skill. Soon after, the osteria opened next door, sharing the same commitment to quality. Today, Osteria Il Maialetto in Monsummano Terme remains true to that heritage: “Carni sopraffine e specialità toscane dal 1930.”
The osteria is just one part of a family group that includes the original butcher shop, a botteghina in the town square, and a bistrò in Montecatini Terme. But it is here that the family’s philosophy shines: select meats from trusted local breeders, butchered and prepared in-house, then cooked with creativity and respect for tradition. The keyword is “produzione propria” – they make their own sausages, salumi, and sott’oli, and treasure recipes passed down through generations.
The menu draws on the best of Tuscan cuisine. Specialties include the Cioncia alla Pesciatina, a rare cut prepared according to local custom; Tordelli with meat sauce; and the Bistecca, a thick-cut grilled steak. Among the house-made salumi, the Coppa stands out: a traditional cooked salume made with head, rind, and tongue, simmered with natural aromatics. The Arista alla Contadina – pork loin seasoned with herbs and slow-cooked in lard – is another classic, preserved in its own fat or extra-virgin olive oil.
The Osteria’s dedication to quality has not gone unnoticed. It earned a place in the Michelin Guide, a recognition that reflects the consistency and care that define every dish. For those seeking authentic Tuscan flavors in a setting that feels both rustic and refined, Osteria Il Maialetto is a destination worth seeking out.
