Cortile Arabo, Marzamemi: Sicilian tradition, contemporary expression

In the heart of the fishing village of Marzamemi, near Pachino in southeastern Sicily, Cortile Arabo occupies an ancient courtyard of Arab origin. Architecturally, the space is a quiet metaphor for the cooking that comes from its kitchen: three entrances, multiple perspectives, one cohesive vision. Inside, the scent of herbs and freshly baked bread leads to a terrace where the sea becomes the soundtrack.

Chef Massimo Giaquinta leads the kitchen, tracing a path that combines instinct with research, tradition with experimentation. He and his brigade work from a shared ethos: the conviction that great cooking is a choral effort, a dialogue between hands, thought and technique. The result is a cuisine rooted in the island’s heritage, but never static.

Cortile Arabo’s philosophy is one of reinterpretation without distortion. Historical recipes, familiar ingredients and ancient techniques are taken apart and rebuilt into forms that are essential and personal. The cooking here does not chase surprise for its own sake; it aims to reveal. The chef describes it as “a subtle balance between what we already know and what we don’t expect.” True innovation, he says, when done with care, tastes like something you had forgotten.

The menu is driven by what the surrounding land and sea provide. The best catch of the day, the freshest vegetables from nearby farms, meat from sustainable producers — all handled with respect. Each ingredient is meant to speak for itself, with its own intensity and truth. Even the leavened breads, made daily in-house, follow the same principle: few elements, rigorously selected and carefully worked.

This approach has earned Cortile Arabo a Michelin Recommended status, a recognition that sits naturally alongside the restaurant’s own ambitions. The Michelin guide’s attention confirms what the team prioritises: a kitchen that grounds itself in memory, evolves through practice, and never loses sight of where it comes from.

Alongside the restaurant, Cortiletto offers an adjacent cocktail bar where a dedicated mixology programme explores botanicals, kombuchas and spices in elegant, balanced serves. It is a separate, intimate space, but one that shares the same search for contrast and precision.

For those who visit, Cortile Arabo is an experience of contemporary Sicilian cuisine in a setting that feels both ancient and entirely of the moment.
