A Fresh Start in an Old Trattoria

Ten years ago, chef Luca Tomasicchio took over one of Padua's oldest trattorias and gave it a new name: Tola Rasa. The Latin phrase "tabula rasa" means a clean slate, and for the chef it signified a restart. He renovated the space on Via Vicenza, transforming it into a restaurant where every detail – from the mahogany and oak tables to the linen napkins and carefully chosen art – reflects his vision of hospitality as an expression.

Tomasicchio's path to the kitchen was roundabout. Born in Milan in 1976, he left law studies to wash dishes at Hotel Plaza in Padua. From there he trained at some of the Veneto's most celebrated kitchens: Dolada, Montecchia, Le Calandre. He then worked in Lombardy with Knam and Cracco, in Tuscany with Arnolfo, and spent years abroad – in France, Spain, the UK, Belgium, Germany, and Japan. After eight years in Luxembourg, where he opened Mi&Ti, he returned to Italy and worked as a waiter under Adriano Fumis. That broad experience, he says, taught him the empathy between kitchen and dining room that defines Tola Rasa.

The kitchen is left completely open to the dining room, so guests see the precise gestures and attention that go into every plate. The restaurant's approach to modern cuisine is grounded in respect for the entire creative process: daily selection of the best ingredients, careful handling to extract elegance, and a service where chefs and waiters work in complete synergy. The result is a performance in which food is the absolute protagonist.

Menus and Michelin Recognition

Tola Rasa offers two tasting menus – Classici (traditional-inspired) and Contemporanei (more avant-garde) – as well as à la carte options. Dishes like guazzetto di pesce speziato, risotto with shiitake and cuttlefish, and "Ciupa" (foie gras pâté with caramelised almond and passion fruit) showcase the chef's ability to evolve familiar flavours into something new. This modern cuisine has earned Tola Rasa a place in the Michelin Guide, which recommends it as one of Padua's noteworthy dining destinations. The restaurant is also recognised by Il Golosario, Identità golose, and Bibenda.

Beyond the dining room, Tomasicchio offers a private chef service, bringing Tola Rasa's flavours to homes or events. Whether a romantic dinner or a family gathering, the experience can be tailored.
