The kitchen, led by Executive Chef Daniele D’Alberto, celebrates the culinary heritage of Abruzzo — a region rooted in ancient fishing culture, yet open to the flavours of the countryside and mountains.
Chef D’Alberto, a Pescara native and graduate of the Filippo De Cecco hospitality school, honed his skills in five-star hotels and alongside masters such as Gianfranco Vissani, Moreno Cedroni, and at Il Pellicano. Named Miglior Chef Emergente (Best Emerging Chef) in 2015, he now brings that depth of experience back to his home city. His philosophy is clear: honour tradition while introducing innovative touches, promising an experience that is both grounded and surprising.
A distinctive note in the kitchen’s direction comes from Heinz Beck, the three-Michelin-starred chef who has collaborated with Café Les Paillotes for over twenty years. Beck’s international experience guides the menu’s constant evolution, always keeping a firm connection to the Abruzzo territory.
