Tucked into a narrow street in Rimini’s ancient fishermen’s quarter, Osteria de Börg is a place where tradition meets genuine hospitality. The cooking here is rooted in the Romagna countryside – what the owners call “cucina di terra.” For over thirty years, they have worked with local farmers and producers who supply Slow Food presidia meats, cheeses from the Buonpastore farm in Montefiore Conca, and vegetables from the Rimini hinterland. The menu changes with the seasons, but the backbone remains the same: handmade pasta, grilled and braised meats, and house-made preserves.
Pasta is made daily with a rolling pin. You’ll find strozzapreti, tagliatelle, ravioli, passatelli, gnocchi, and the signature cappelletti – served either in classic chicken broth or in a carrot broth, a recipe created by Luisa that has become one of the restaurant’s most iconic dishes. Meat lovers come for the Mora Romagnola pork, the castrato, the Florentine steak, and the salsiccia, all cooked over coals or in a pan.
