Al Volt has been a fixture on via Fiume since 1973, serving what the restaurant calls "cucina raffinata" – refined cooking rooted in the traditions of Trentino. For over fifty years, this family-run address has balanced warm hospitality with a serious commitment to local ingredients and careful technique. The result is a menu that feels both timeless and alive.
The kitchen draws on the best of the region: seasonal vegetables, mountain cheeses, lake fish from nearby Garda, and meats from Trentino farms. The cuisine is described as "tradizionale trentina unita a creatività contemporanea" – classic country cooking with a modern sensibility. Starters like the battuta di trota salmonata on a gaspacho of datterini tomatoes, or the carpaccio of braised veal tongue with salsa verde mayonnaise, show a chef who respects the past but isn't afraid to play. Among the primi, the homemade spaghetti with Castelmagno cheese and black truffle is a signature, as are the ossobuco ravioli with Trentingrana fondue and veal reduction. Second courses lean hearty: duck leg with orange and Grand Marnier, slow-cooked beef cheek in cocotte, or milk-fed pork shank with Gorgonzola sauce. Al Volt's wine list is a deep dive into Trentino and Alto Adige, with a strong selection of local classics: Teroldego, Lagrein, Pinot Nero, and a range of Trentodoc sparkling wines from producers like Ferrari, Mosèr, and Pojer e Sandri. Champagne and Franciacorta also get their due. The list is priced fairly and offers something for every course.
