The story
On the shores of Lake Garda in Torbole, Aqua is a fine dining restaurant where the water is both setting and inspiration. It is an elegant, romantic space that turns its gaze to the lake—and what the kitchen finds there in terms of beauty, nature, and identity arrives at the table each evening.
The restaurant has earned a Michelin Recommended award, a recognition of its precise, vision-driven approach to Italian contemporary cuisine.
The kitchen is led by Chef Nazarii Shainoga, who composes his menu in three distinct tasting paths. Emotions from Garda draws on freshwater fish from the lake, blending technique with a lightness that reveals depth. A Journey through the Plant World puts vegetables, herbs, and seasonal produce at the centre, creating an elegant and often surprising balance. Meat in Tradition reinterprets classic flavours with awareness, turning memory into an intense, authentic experience. Each tasting menu is designed as an act of trust—a choice to let go and be guided.
For those who prefer to compose their own evening, an à la carte option is also available.
The restaurant’s philosophy is one of careful alchemy. The team studies how ingredients react, how techniques can elevate without altering, and how contrasts can become harmony. Desserts are treated as a natural extension of the meal—a narrative conclusion rather than an afterthought, built on measured sweetness and delicate contrasts.
The wine cellar supports each tasting path with optional pairings, and the dining room service is attentive without being intrusive. With outdoor seating in good weather and a setting directly on the lake, Aqua offers a complete fine dining experience that stays true to its Garda roots.
