The story
Adelaide, the restaurant and lounge at Hotel Vilon, takes its name from Princess Adelaide Borghese. It is a homage to the grace of Italian hospitality, reflected in both the refined setting and the kitchen. The space is divided into the dining room and the bar area, called In Salotto, where guests can enjoy a more relaxed atmosphere.
The kitchen is led by Executive Chef Gabriele Muro, whose menu centers on Mediterranean cuisine with a strong foundation in Roman tradition. Dishes change with the seasons, respecting the rhythm of local produce while updating classic flavours. The result is Italian contemporary cooking that feels both rooted and forward-looking – a style that earned the restaurant a Michelin Recommended distinction.
Beyond the elegant indoor dining room, Adelaide offers a patio that evokes a bohemian jungle. Dense greenery surrounds the tables, creating a calm, almost secret corner in the heart of Rome. It is open year-round but especially inviting in fine weather. Whether for a full meal or a drink at the bar, the setting matches the kitchen’s warmth and precision.
This is modern cuisine that celebrates its heritage without fuss – precisely the kind of place that makes you want to linger.
