The story
Sixty steps from the Pantheon, on Salita de' Crescenzi, Armando al Pantheon has been a fixture of Roman dining since 1961. The Michelin Recommended award recognizes its steadfast commitment to classic Italian cuisine, served in a setting that feels both historic and warmly familiar.
The restaurant began when Armando Gargioli, an exceptional chef, took over an old, struggling establishment and transformed it into a "bottle shop with kitchen." He named it Armando al Pantheon. The small venue quickly gained notoriety for its honest cooking. Today, the restaurant remains in the family: Claudio Gargioli, Armando's son, now leads the kitchen. Claudio’s passion for cooking developed over time, alongside a talent for writing—he has published books of recipes and anecdotes, and even a novel, The World Is All in the Kitchen, which blends culinary fiction with autobiography.
Fabiana Gargioli, a professional sommelier certified by the Italian Sommelier Association, runs the dining room and curates the wine list. She focuses on native Italian grape varieties, visiting vineyards and cellars to select wines that speak of the land. Her work supports local producers and, through her involvement with the non-profit FFK, raises funds for the Bambino Gesù Hospital.
The restaurant’s guest gallery reads like a who’s who of film, architecture, and gastronomy—from Matt Dillon and Emilia Clarke to Renzo Piano and Massimo Bottura. Yet the atmosphere remains that of a traditional Roman tavern, where the food is the centerpiece. Classic cuisine, Roman through and through, is served with a quiet confidence that has kept locals and travelers returning for decades.
