The story
From the Latin for "enter," INEO invites diners into an exploration of flavour. The restaurant occupies a historic palace on the Piazza della Repubblica, within the Neoclassical elegance of the Anantara Palazzo Naiadi Rome Hotel. Here, authentic Italian hospitality meets an intimate sensory dining experience beneath the iconic arches of the square.
Born in Rome with an international background, Chef Heros brings almost 30 years of experience from multi-Michelin-starred kitchens and luxury hotels worldwide. Mentored by Heinz Beck and shaped by collaborations with masters such as Joël Robuchon, Heinz Winkler, and Marc Veyrat, he calls his cooking a "metissage" – a weaving together of aromas, scents, and spices from the territories he has lived in and travelled through. His vibrant, balanced cuisine is defined by bold colours, unconventional presentations, and dishes that form a cohesive and joyful gastronomic journey. In 2023, he chose to pursue a personal path at INEO, redefining the relationship between food and sensory experience, where taste, emotion, and memory converge.
De Agostinis presents a refined culinary experience born from a thoughtful dialogue between past and present, aesthetics and creativity, technique and contemporaneity. The menu reflects a balance between tradition and creativity, complemented by a carefully selected wine list. This approach to contemporary Italian cuisine, rooted in an international perspective, earned the restaurant a Michelin star for its high-quality cooking. At INEO, the fine dining experience is a sensory exploration, where every dish is part of a cohesive and joyful gastronomic journey.
