Here, the fifth quarter (quinto quarto) is not a memory of poverty, but a living culture—gastronomic intelligence that wastes nothing and understands the animal, time, and fire.
This focus on humble, identity-driven ingredients earned L'Osteria della Trippa a Michelin Bib Gourmand, recognising its good quality, good value cooking. The restaurant’s symbol is tripe itself: humble, profound, and sincere, offered in multiple versions because, as the team puts it, “a great dish is never just one, but many stories of the same gesture.” The cuisine is unapologetically Italian, rooted in the recipes and identity of Rome and Lazio, with a wine cellar of Lazio and Italian labels chosen for drinkability and character.
At the heart of the osteria is hostess Alessandra Ruggeri, who welcomes, listens, and tells stories. Hospitality here is direct, attentive, and human—every guest is a guest, not a customer.
