The story
Romanè is the first restaurant from chef Stefano Callegari, a celebrated figure in Roman cuisine. Located on via Cipro, it was an immediate success upon opening in 2021, quickly establishing itself as a destination for honest, flavourful Italian cooking. The restaurant’s ethos is simple: “Semplicemente godere” – simply enjoy. This philosophy is built on a dedication to traditional cooking methods and high-quality ingredients.
At Romanè, the kitchen avoids modern conveniences like convection ovens and steam cookers, relying instead on pots, pans, fire, and fryers. The focus is on the raw ingredients, sourced primarily from Lazio but also from other Italian regions, chosen for their fidelity to traditional flavours rather than for their labels. The menu is a celebration of Roman and Italian classics. Dishes like trippa alla romana, coratella d'abbacchio, polpette di bollito, and cacio e ovo sit alongside pasta staples such as rigatoni alla carbonara and fettuccine broccoli e pecorino. Hearty mains like pollo alla cacciatora and saltimbocca alla romana complete the picture.
In its second location at via Cipro 61, Romanè expands its offering with a seafood-focused menu. Here, chef Callegari applies the same rustic approach, drawing on regional seafood recipes. Dishes like calamaro ripieno, seppie con i piselli, and polpo in salsa verde highlight a love for rich sauces and robust flavours. The menu also includes inventive creations like saltimbocca iodato and the legendary, unmissable supplì—a Roman classic done to perfection.
This dedication to quality, tradition, and value has earned Romanè a Bib Gourmand from the Michelin Guide for 2026, a testament to its consistent delivery of excellent Italian cuisine at a reasonable price. It’s a place where the spirit of Italian home cooking is alive and well.
