A Return to Origins

At Alpes, the restaurant of the Bad Schörgau retreat in the Sarentino Valley, cuisine is anchored in what grows, grazes, and emerges from the surrounding alpine landscape. Seasonality and provenance set the rhythm; craftsmanship and attention define the taste. Every dish speaks of the terrain, the climate, and the patience required to coax flavour from this high-altitude environment. The kitchen is honest, precise, and stripped to essentials – a cuisine that returns to where it all began.

Alpessenz – Culinary at Higher Levels

Under the guidance of chef Matthias Kirchler, the kitchen’s most concentrated expression is called ALPESSENZ. It is a tasting menu that takes its cues from the valley’s altitude, its seasons, and the ingredients that ripen here. Alpine products are combined with artisanal techniques and contemporary precision to produce a clear, unadorned gastronomic statement. The focus is not on spectacle but on substance: taste, origin, time, and the relationship between nature and people. ALPESSENZ is not classic fine dining – it is an experience at a higher level, essential, attentive, and deeply tied to the place. Open Thursday to Saturday evenings, by reservation only.

Alpes Locanda-Veranda

Alongside the fine dining experience, the Locanda-Veranda reinterprets the spirit of the inn with contemporary flair. Here conviviality meets refined craftsmanship and genuine hospitality. Dishes tell stories: house-made speck marinated with barley-koji, Sarentino beef prepared from nose to tail, always in tune with the season. The wine list brings together favourite Alto Adige labels alongside bold classics from around the world, all housed in a historic cellar with over 600 wines, stored at optimal conditions. The Locanda-Veranda is open Wednesday to Sunday for lunch and dinner.
