The story
Il Conte Matto sits in the small town of Trequanda, within the municipality of Sinalunga. The restaurant describes its cooking as Tuscan cuisine of the place, with Renaissance and creative proposals using products purchased in the short chain. This commitment to local sourcing and traditional techniques has earned it a Michelin Bib Gourmand, a recognition of good quality, good value cooking.
The menu honours the region’s culinary heritage. Starters include a tasting of typical Tuscan pâtés on toast and an assortment of fine raw hams such as Cinta Senese aged 18 months. Among the first courses, you find ribollita, the classic baked vegetable and bread soup, and handmade pici with Aglione garlic in tomato ragout. For second courses, the kitchen offers a grilled Fiorentina-style T-bone steak from Chianina cattle, as well as a wild boar prepared “Dolce e Forte” style – an ancient Renaissance recipe from Florence with raisins, cocoa, pine nuts, candied fruit and red vinegar. All desserts are homemade, including a tiramisu and an almond brittle parfait.
The restaurant provides both indoor and outdoor seating, with a terrace available. An aperitif service features still and sparkling wines, bubbles and cocktails. There is also a small cellar-tasting room where guests can purchase bottles of wine and typical local products. For those who prefer to eat at home, takeaway dishes are offered for lunch and dinner. On every table, you will find organic extra virgin olive oil from the hills of Trequanda.
Il Conte Matto is closed on Tuesdays and for a summer holiday period from late June to early July. Reservations are recommended, and the restaurant does not offer separate bills.
