Gion Fukushi: Michelin-Starred Kaiseki in Kyoto's Gion District

A quiet lane in Gion, Kyoto, holds a restaurant where the seasons speak through each dish. At Gion Fukushi, chef Takuyoshi Fukushi crafts kaiseki that balances tradition with a contemporary sensibility.

The chef’s path is rooted in discipline. After training at the esteemed Kyo-ryori "Kaijū" and a Ginza kappo, he spent 17 years at "Tankuma Kitaten Honten", eventually becoming head chef. In 2017, he opened his own restaurant in Gion—a neighbourhood already rich with atmosphere. His experience extends beyond Japan: he served authentic kaiseki at the 2010 Shanghai World Expo and participated in a Kikkoman event at the 2015 Milan Expo, cooking at the Palazzo Stelline.

The dining room is intimate, with a hinoki counter that seats eight and a small table for four. From the counter, guests watch the kitchen’s quiet, focused work. The space is designed to let the food and the moment take centre stage.

Gion Fukushi’s philosophy is simple: let the ingredients speak. Two omakase courses are offered. The Omakase Course changes with the market, presenting seasonal ingredients in their most refined form. The Takumi Course is a more elaborate sequence of about twelve dishes, featuring premium seafood from across Japan—seasonal appetisers, sashimi, grilled items, nigiri, a palate cleanser, soup, and dessert. Both courses reflect the chef’s belief that a dish should harmonise ingredient, vessel, and aroma.

This commitment to quality earned Gion Fukushi a Michelin 1 Star in 2026, a recognition that the restaurant’s quiet, precise work is among the best in Kyoto.
