Chef Suzuki, a native of Shiga Prefecture, honed his skills as head chef at the Kyoto resort YUNOHANA RESORT Suisen for five years before opening Higashiyama Yoshihisa in September 2018. His motto is “change and evolution,” and he applies it with a free-spirited approach, combining broad techniques and ingredients to compose original, concept-driven courses that change monthly. This commitment to constant renewal has earned the restaurant a Michelin star every year since its opening.
The restaurant’s creed is to deliver the taste of that moment only. Each season brings a new narrative, with dishes woven from ingredients and techniques available only at that time of year. The encounter is meant to be a momentary sparkle. The menu is a single course, with lunch priced at 12,000 yen and dinner at 34,000 yen (prices vary in January and December). The space itself, with 14 seats at a counter and a private counter for four, places the focus squarely on the chef’s performance and the subtle interplay of light across the plate.
Higashiyama Yoshihisa’s reach extends beyond its counter. The restaurant offers an online shop featuring its signature “Kimi Shuto Sauce,” a rich, yolk-based condiment. Chef Suzuki is also actively involved in collaborations, pop-ups, and culinary consulting, including a planned 2026 opening of a teppan kaiseki restaurant in Miyagawacho.
