Hyotei: Four Centuries of Kaiseki at Nanzenji

On the grounds of Nanzenji Temple in Kyoto, Hyotei has cultivated a tradition of Japanese hospitality for more than 400 years. What began as a rest stop for temple visitors has evolved into one of the most revered dining destinations in Japan, a fact underscored by its Michelin 3-Star rating for exceptional cuisine. The restaurant’s own history speaks of a spirit of “wabi-kansai” (和敬清寂) and a kaiseki foundation that balances tradition with quiet innovation.

The experience at Hyotei is inseparable from its setting. The main building is composed of several independent tea rooms, each with its own character. One room retains its original thatched roof from the founding era, while others feature a four-and-a-half tatami space called “Tansen-tei,” a room with a striking round window, and a wide hall with a sunken hearth. A separate annex offers more relaxed table seating, surrounded by a garden, where guests can enjoy the seasonal morning congee.

The Seasons on a Plate

Hyotei’s cuisine is a direct reflection of Kyoto’s seasons. The menu changes constantly, but a few dishes have become legendary. The signature “Hyotei Tamago” (瓢亭玉子) is a perfectly cooked egg that has been a house specialty for generations. In summer, the restaurant offers “Asagayu” (morning rice porridge) at both the main house and the annex, a light and restorative meal designed to help beat the heat. Winter brings “Uzugayu” (quail porridge), where cooked rice is washed, simmered with quail meat and broth, and scattered with seri (Japanese parsley) for a deeply warming dish available from December to mid-March.

Seasonal highlights are announced as they arrive: bamboo shoots from Oharano in spring, sweetfish in early summer, and prized matsutake mushrooms from Hokkaido in autumn. The kaiseki course itself, served at lunch and dinner in the main house, is a progression of small, artful dishes that embody the essence of Japanese cuisine.

A Setting of Timeless Beauty

Dining at Hyotei is as much about the atmosphere as the food. The gallery of the restaurant’s website shows the changing face of its beautiful garden through the seasons—from cherry blossoms to autumn leaves. Each tea room offers a private, contemplative space where the garden is part of the meal.
