The story
At Jin Jing Ge, the Chinese restaurant within Four Seasons Hotel Suzhou, Executive Chinese Chef Charles Zhang draws on deep roots in the culinary traditions of Jiangsu and Zhejiang provinces. The result is a menu of Jiangzhe cuisine that honors seasonal ingredients and regional techniques.
The Michelin Guide has recognized Jin Jing Ge as a Michelin-selected restaurant, a testament to the kitchen’s precision and respect for the local culinary heritage. Chef Zhang, who honed his craft at luxury hotels and a Michelin-starred restaurant in Shanghai, focuses on maintaining the authentic foundation of each dish while finding innovative ways to unlock new flavors.
Signature dishes include steamed duck with fish maw, conpoy, shepherd’s purse, and bamboo shoots; braised pork belly with fermented red rice and baby broccoli; deep-fried mandarin fish with sweet and sour sauce; crispy chicken with spicy salt; and a soft-boiled egg with sea urchin custard and yellow wine. These plates reflect the chef’s philosophy of using local ingredients and celebrating the purity of each season.
The restaurant offers an à la carte menu, a Michelin tasting menu, and a weekday dim sum lunch set for two. Seven private dining rooms provide picturesque views and accommodate four to sixteen guests, suitable for business meetings or family celebrations. The atmosphere is elegant and welcoming, with views of Jinji Lake and the Suzhou skyline.
Jin Jing Ge is open daily for lunch and dinner, with seasonal events like the Spring Delicacies menu. The dining experience is a refined expression of Jiangzhe cuisine, where tradition and modernity converge in every bite.
