On a quiet street south of Bukkoji Temple in Shimogyo-ku, Kanzan is a ten-seat counter where chef-owner Kazuma Yagi practices a deeply personal style of Japanese cuisine. The restaurant earned a Michelin recommendation in the 2026 Kyoto-Osaka guide, a recognition of the precision and sincerity that define every course.

Yagi trained for sixteen years at Kyoto’s legendary Kitcho Arashiyama and eight more at the esteemed Hiiragiya Ryokan before opening Kanzan. His cooking is rooted in a single, deliberate choice: vegetables grown in the rich water and soil of Shugakuin Imperial Villa, sourced from a farm with over three hundred years of history. He handles each ingredient to draw out its innate flavor, letting the quality of the produce speak.

The menu is kaiseki in spirit—seasonal, composed, and unhurried. Lunch is served on Wednesdays, Fridays, and Sundays; dinner runs nightly except Mondays. Both seatings require at least two days’ notice, as Yagi begins preparing several days in advance. Prices range from 10,000 to 25,000 yen, plus a ten percent service charge.

Beyond the counter, Yagi crafts items like seasonal mackerel sushi and house-made blended seasonings, available for takeaway or delivery across Japan. The atmosphere is calm and direct—a place to watch a master work in silence, from the wash to the plate.
