The Philosophy of Water

KOKE is one of three spaces within IDO KYOTO, a project built around a well in the garden. The restaurant draws its water from that well, using it as the foundation for a cuisine that values the essence of ingredients. The guiding principle is “hospitality born from water” – a commitment to healthful deliciousness achieved through care and respect for the elemental.

Chef and Team

Chef Yusaku Nakamura leads a team of artisans who together embody a poetic set of ideals: rooted in the earth, building the place, feeling the wind, respecting the sun, blooming in rain, water rippling, gratitude for life, lighting the fire, savoring the season, becoming nature. This philosophy translates into cooking that is both grounded and precise.
