In a quiet corner of Kyoto's Nishijin district, a renovated traditional townhouse holds one of the city's most personal kaiseki experiences. Masumasu Masuda is run by chef Takahito Masuda, his wife, and their small team — a family affair that imbues every course with warmth and intention.

The cuisine here is Japanese, rooted in the kaiseki tradition but unbound by rigid formality. Chef Masuda, originally from Nikko in Tochigi Prefecture, brings produce from his homeland alongside Kyoto's celebrated local vegetables. The result is a ten-course dinner that feels both of Kyoto and distinctly personal. "I aim for a beautiful taste that is gentle on the stomach," he says, and the menu is built around vegetables, with dashi tailored to each ingredient.

Standout ingredients include Tochigi wagyu, prized for its fine marbling and deep flavor, and "chōmasu" trout, a specialty with a unique character. These appear in dishes that highlight the ingredient itself rather than overwhelm it. The cooking is precise, the presentations clean — a reflection of the chef's belief that the finest flavors come from the best raw materials, simply handled.

The setting matches the food. The machiya interior blends old Kyoto character with modern comfort, creating a space that is refined yet relaxed. Counter dining puts guests face-to-face with the cooking, while the atmosphere stays unhurried and genuine. Michelin has recognized this approach with a Recommended status, a quiet nod to the quality of what happens here each evening.
