A Chef’s Dedication to Tempura Kaiseki in Kyoto

Miyagawacho Tensho is the creation of chef Ryuji Hasegawa, who spent two decades at the traditional Kyoto ryokan “Tempura Yoshikawa,” serving as head chef for the last 18 years. In this intimate 10-seat restaurant along the quiet Miyagawasuji street in Higashiyama, he brings that experience to a focused tempura kaiseki menu. The restaurant earned a Michelin Recommended distinction in 2026, a nod to the precision and care that defines every course.

The Craft of Tempura in White Soybean Oil

The kitchen uses 100% white soybean oil to fry the tempura, aiming for a light, crisp coating that enhances rather than masks the natural flavors of the ingredients. Chef Hasegawa personally visits markets to select the finest seasonal seafood and produce from the best growing regions. The result is a series of pieces served one after another, each at the perfect moment. The menu changes with the seasons, and the “Tempura Kaiseki Course” includes appetizers, sashimi, clear soup, and about ten types of tempura, followed by rice and dessert. Lighter options like the “Tempura Lunch Course” and a simpler “Tempura Course” are also available.

An Atmosphere of Quiet Presence

The interior is centered on a single slab of hinoki cypress, polished to a warm glow, where guests can watch the chef’s movements up close. The setup is deliberately simple – just ten counter seats – so the focus stays on the cooking and the food. The restaurant is open for dinner, with lunch available by reservation, and the dress code is smart casual. It is a place for those who appreciate the rhythm of a well-made kaiseki meal, where tempura is not just fried food but a craft that respects the ingredient’s essence.
