In the quiet green of Maruyama Park, above the weeping cherry trees and the lily-pad pond, Mizai occupies a second-floor space that feels removed from the city below. The restaurant's name means "not yet arrived" — a humble nod to the pursuit of perfection that has defined its path since opening in 2004.

Chef Ishihara Hitoshi leads the kitchen, presenting Japanese cuisine in the form of tea kaiseki — the multi-course meal traditionally served before a bowl of matcha. Mizai calls its own version "Mizai-style menu," and it unfolds over roughly three hours. All guests begin at the same moment, 6:00 pm, so that each dish arrives at its ideal temperature and texture.

The cooking is precise and ingredient-driven, rooted in the seasonal rhythms of Kyoto. The space itself is intimate: counter dining puts guests close to the action, while private tea rooms are available for those who prefer a more secluded setting. The dress code is smart casual or kimono — a reflection of the mutual respect Mizai encourages among its diners, a concept the restaurant describes as "one gathering, one sitting."

Mizai received three Michelin stars in 2026, a recognition of its exceptional cuisine and unwavering consistency. The restaurant also offers its own house-blended spice mix, "Hachimi" (eight flavors), made from eight carefully selected domestic spices — a subtle souvenir of the meal.

Reservations are accepted up to a year in advance. The approach to the restaurant, through the park's winding paths, can be busy during cherry blossom and autumn seasons; guests are advised to allow extra time.
