In Kyoto’s Nakagyo-ku, a former family home has been transformed into a soba destination. Saryo Tesshin opened its doors in April 2024, born from a 40-year legacy of soba mastery in Miyazaki. The restaurant’s name and spirit reflect a philosophy of moving beyond mere deliciousness — “美味しいのその先へ” — towards a deeper appreciation of craft and ingredients.

The interior is as considered as the food. A massive eight-meter gold-leaf painting by artist Shinsuke Kawahara, titled “A Playful Scene of a Parent and Child Tiger with Two Hares,” stretches behind the counter. The counter itself is covered in handmade washi paper by Wataru Hatano, while a massive stone table at the entrance, made from Aji stone by Izumiya Isseki, sets a grounded, elegant tone.

The menu centers on soba, made with ten-wari (100% buckwheat) flour. The signature “Daigo Soba” is a study in contrasts: cold soba in a rich katsuo dashi, topped with a cloud of fluffy Parmesan cheese, a drizzle of extra virgin olive oil, and a golden egg yolk from “Ryū no Tamago.” The yolk, a local specialty, is the only part used — the leftover whites are transformed into gluten-free “Soba Flour and Wasanbon Financiers,” a testament to the kitchen’s no-waste ethos.

Beyond the signature dish, the menu offers seasonal options like chilled mozuku soba in summer, and a warming “Kyo-kamo Nanban” with duck. For those seeking a deeper exploration, the evening “Yoru no Soba Zanmai Kōfuku Course” presents a multi-course progression of soba in various forms — from soba sushi to sobagaki, tempura soba, and a final duck and soba congee. A dedicated breakfast service, “Asa Soba to Otona no Asa Gohan,” is available by reservation, offering a refined morning meal.

Saryo Tesshin’s commitment to quality and value has been recognized with a Michelin Bib Gourmand award for 2026. This soba shop in Kyoto is a place where the precision of Japanese culinary tradition meets a contemporary, art-filled space, offering a meal that is both grounded and memorable.
