The name "Ifuki" means "to blow" – a gentle breath that adds just enough to make something complete. At Sumibi Kappo Ifuki, that breath is charcoal fire. The restaurant’s approach is simple: ingredients are simmered until plump and tender, then quickly passed over glowing binchotan. The result is a warmth that the chef describes as akin to human skin, and an aroma that stirs the appetite before the first bite.

Dinner is an omakase course, offered in three tiers starting at 33,000 yen. The setting is a traditional Kyoto machiya in the heart of Gion, with a seven-seat counter that puts guests face-to-face with the chef’s work. For those who prefer privacy, there are two private rooms accommodating two to six guests. The atmosphere is quiet, focused, and welcoming – the kind of place the chef himself says he would want to return to.
