The story
The philosophy at TAKAYAMA is distilled into a simple equation: comfort plus excitement equals happiness. Chef-owner Takayama brings this to life in a full open kitchen lined with counter seats, designed to let guests connect with each other and with the chefs. The setting is intimate and welcoming, with no barrier between the kitchen and the dining room.
The menu is a single course built around carefully cultivated seasonal ingredients. Chef Takayama approaches each dish from multiple angles, pursuing both beauty and depth of flavor. The result is an "inspiration-driven creative cuisine" that changes with the seasons. The course runs about three hours and is served as many small plates, so guests are encouraged to arrive hungry and pace themselves through the progression. Lunch and dinner are both offered at 30,000 yen (tax and service included), starting promptly at noon for lunch and 6:00 p.m. for dinner.
TAKAYAMA holds one Michelin star, a testament to the high quality of its cooking. The star reflects the precision, creativity, and respect for ingredients that define the kitchen’s approach. It is a quiet mark of consistency in a restaurant that prioritizes the guest experience over formality.
Through the TAKAYAMA JOURNAL, Chef Takayama shares personal stories about ingredients and his craft, offering a deeper look into the thinking behind each dish. The journal is an extension of the restaurant’s desire to make its philosophy feel tangible, even before guests arrive.
