The story
Over a decade ago, three chefs opened a restaurant in Riga’s old Swedish barracks with little more than ambition. They had no investors, but they had a clear goal: to serve tasty, seasonal, modern Latvian food. Friends lent them equipment, paintings, tables, and chairs. To their surprise, every table was full on the first day. That spirit of camaraderie and dedication still defines 3 Chefs today.
Chef Pāvels Skopa leads the kitchen, drawing inspiration from nature and people. His cooking balances respect for each ingredient with a touch of poetry – a sense of nostalgia, a smile, or a brief adventure on the plate. The team works closely with local producers across Latvia, sourcing vegetables, cheeses, berries, and meats that arrive at the restaurant’s historic home in Jēkaba Kazarmas (Jacob’s Barracks), an 18th-century complex near the Powder Tower and Swedish Gate in Old Riga.
