That motto drives Christian Bau and his team at Victor’s Fine Dining, housed in the Victor’s Residenz-Hotel Schloss Berg on the German-Luxembourg border. Since November 2005, this restaurant has held three Michelin stars without interruption — a testament to unwavering dedication. For the 20th anniversary in 2025, an exclusive gala dinner celebrated that extraordinary run.

Christian Bau discovered his fascination with cooking at 14. After topping his class in Achern, he trained at the Schwarzwaldstube in Baiersbronn. In 1998 he moved to the Saarland to lead the kitchen of a new gourmet restaurant at Schloss Berg. Only seven years later, he became Germany’s youngest three-star chef — and has stayed at that peak ever since.

His early work was rooted in classic French cuisine. But after several trips to Asia, Bau developed his unmistakable style: bau.stil. He was among the first to combine French haute cuisine with premium Japanese ingredients, creating a contemporary cuisine that is both precise and deeply flavourful.

Innovation runs through everything here. Bau pioneered the “Carte blanche” concept and the “4 Hands Dinner”, inviting international star chefs to cook alongside him. During the pandemic, he created the “BAU.BOX”, a fine-dining takeaway that earned global attention, including a feature in Forbes. In 2018, Gault&Millau named him “Chef of the Year”, and he was awarded the Federal Cross of Merit as a “culinary ambassador of Germany”.

The team shares his philosophy: “We want to make people happy with our work.” Every member gives 100 percent, and respect is as essential as passion in the kitchen and service. The result is an atmosphere of quiet elegance, where each contemporary tasting menu tells a story of product and place.

Victor’s Fine Dining welcomes guests Thursday through Sunday for dinner, with lunch service on weekends. The wine list is notably deep, and a notable sake selection complements the Japanese influences in Bau’s cooking. Reservations are essential for this singular experience in Remich.

The seven-course "Paris – Tokyo" menu can be extended with additional dishes. Meat is offered only as an optional addition. Final orders are taken at 8:00 PM for dinner and 12:45 PM for lunch.
