Christian Bau discovered his passion for cooking at fourteen in the Black Forest before mastering classical techniques abroad. He brought that foundation to Victor’s Fine Dining by Christian Bau in Remich, where his approach to haute cuisine quickly earned lasting acclaim. After several trips to Asia, he developed the bau.stil style, blending European foundations with premium Japanese ingredients. Sous chef Sarah Bau now supports this direction, focusing heavily on crustaceans and shellfish.
The kitchen builds its offerings around the “Paris – Tokio” signature menu, which traces a clear path from traditional French techniques to modern Japanese cuisine. Every plate relies heavily on fresh seafood and seasonal vegetables sourced from trusted producers worldwide. Guests can choose the five-course “Einfach Bau” arrangement or book the exclusive Chef’s Table for small groups. Sommelier Ester Eggert coordinates precise wine pairings throughout each course to highlight the natural brightness of the produce.
Meals unfold in the atmospheric setting of the Victor’s Residenz-Hotel Schloss Berg, where guests begin with an aperitif in the lounge before moving to their tables. Restaurant manager Thomas Blessing oversees every detail, ensuring seamless table service and attentive pacing. The dedicated Chef’s Table offers a more intimate experience, allowing diners to watch individual dishes receive final touches directly at the seat. The restaurant has maintained three Michelin stars continuously since November 2005, a benchmark reinforced by recent recognition such as the two red radishes from the We’re Smart Green Guide.
