The dining room is dressed in the warm yellows of Amalfi lemon trees, with live culinary performances adding a theatrical, convivial energy. The setting is an immersive Italian escape, right in the heart of Cotai.
Executive Chef Marco Pacetta inherited his passion for Italian cooking from his grandmother in Naples. He refined his craft under Michelin-starred masters Davide Palluda and Guy Savoy in Paris, and later in the spice markets of Bali. At Sole e Mare, he blends Southern Italian traditions with global inspiration, focusing on market-fresh ingredients and the warmth of an Italian family meal.
The menu starts with appetizers like Hand-Sliced Amberjack, brightened with sun-ripened citrus. Pasta courses include Homemade Beef Fagottini, a refined twist on Roman tradition. For the main course, the Al Cartoccio Seabass is baked with time-honored techniques and finished with Sicilian white wine sauce. Dessert brings a personal note: Classic Tiramisu, prepared from a recipe handed down by the chef’s grandfather.
Fontana’s wine program has earned the Wine Spectator Best of Award of Excellence (2025), a testament to its thoughtfully curated selection that complements Chef Pacetta’s vibrant Southern Italian cuisine.
