Mémoire: Molecular Gastronomy in George Town, Penang – Michelin Recommended

Tradition Meets Innovation

Mémoire, located on Lebuh Pantai in George Town, Penang, is the creation of Chef Chong Chian Fung. The name, French for “memory,” reflects the restaurant’s philosophy: every dish should evoke a lasting memory, not just a fleeting moment. Mémoire blends heritage flavors with modern gastronomy, crafting dishes that spark nostalgia while pushing culinary boundaries.

Chef Chong Chian Fung

Chef Fung’s career spans over two decades, from his early days at Raffles Hotel Singapore to senior positions at Marina Bay Sands and Morsels. He has won multiple international medals, including gold at the Global Culinary Challenge and the Republic of Korea International Culinary & Pastry Competition. In 2023, he returned to his roots in Penang to establish Mémoire, where he applies precise modernist techniques to local ingredients. “Cooking is an art that connects tradition with creativity,” he says.

The Dining Experience

The restaurant offers an intimate 12-seat counter, giving guests a front-row view of the kitchen’s artistry. A private dining space is also available for gatherings. The atmosphere is designed for an immersive journey, where each plate is a story connecting past and present.

The Menu

The tasting menu changes quarterly, inspired by the finest local produce and seasonal flavors. Lunch features a 4-course Malaysian Flavour set (RM 78–168), with options like Pandan Chicken Mosaic, Sea Grouper Fish, Smoked Roasted Duck, Lamb Shank, or A5 Wagyu Shin Shank. Dinner offers an elevated 6-to-10-course tasting menu (RM 288–448), with courses including amuse-bouches, small plates, a main, dessert, and petit fours. The menu highlights local ingredients, from seafood to poultry.

Recognition

In 2026, Mémoire was selected by the MICHELIN Guide as a Recommended restaurant in Penang, a testament to Chef Fung’s dedication to craftsmanship and innovation. The restaurant also won the 2024 ASEAN Food & Travel Awards’ Best Boutique Dining Experience in Penang, and Chef Fung was a finalist for the Penang Outstanding Youth Award.
