At Gai by Darren Chin in Taman Tun Dr Ismail, the sign out front says it simply: “Gai is family. It is your family.” That spirit runs through every dish, from the hand-pounded curries to the iconic seafood tom yum. Chef Darren Chin, a Michelin-starred chef, and his wife Nana pour their passion into a menu that honours the traditions of northern Thailand.

The restaurant draws its soul from Mama Nuanta and Papa Suwit, both raised in the Mae Ai district of Chiangmai. They began with a humble push cart selling som tum and grilled chicken. Mama Nuanta’s decades of experience in Lanna and Isaan cooking bring a homely, comforting depth to the kitchen. Papa Suwit is an Isaan grill master, lightly marinating meats and whole fish wrapped in turmeric leaves and salt, then grilling them over soft coals. Together, they shape the flavours at Gai.

The Flavours of Lanna and Isaan

Gai’s cuisine is a reinterpretation of Thai northeastern fare, often called Lanna food – “the sleeping beauty of world cuisine,” as the restaurant describes it. Every bite balances salty, sweet, spicy and sour, using the highest quality ingredients sourced across Malaysia and Thailand. The style is family-style dining: dishes are meant to be shared, and the atmosphere is cozy and unhurried.

Standout offerings include the famous fried crab omelette with runny duck eggs, Uncle Surin’s Thai-Muslim Khao Soi with tender braised beef shank, and the Lady Boss Nana Signature Tom Yum Seafood. The menu also features fresh salads, hand-pounded curries, and grilled meats that showcase Papa Suwit’s mastery over charcoal.
