The story

LOA Restaurant & Bar Lounge, St Paul's Bay, Malta – South American Dining

LOA: South American Flavours on the Maltese Coast

In St. Paul’s Bay, near the historic Wignacourt Tower, LOA brings a fresh perspective to Malta’s dining scene. One of the first modern restaurants to open in this coastal area, it has quickly established itself as a destination for those seeking vibrant South American cuisine.

The restaurant’s name draws from two sources: the ancient Río LOA, Chile’s longest river, and the LOAs goddesses, figures of protection and ritual from South American lore. This sense of place and story carries through the dining experience, which is built on a kitchen that pulls from established recipes and contemporary cooking styles across Argentina, Chile, Peru, and Mexico.

The interior is inspired by the textures and flair of South America. Warm materials and layered details create a welcoming atmosphere that flows from elegant indoor spaces to al fresco dining by the Sirens coastal area. It is a setting suited for relaxed lunches, lively dinners, and evenings with craft cocktails and live DJ sets.

The menu is a celebration of South American cuisine in its diversity. Starters include dishes like Baja fish tacos with Lampuki, Wagyu beef shortrib croquetas, and fried oysters with Loa truffle hot sauce. The crudo and Nikkei section is a standout, with seabass ceviche, tuna tiradito, and a ceviche experience that honours the meeting of Peruvian and Japanese traditions. For larger plates, there are grilled steaks, whole fried red seabream, and duck on fragrant saffron rice. A full cocktail list draws on South American spirits, with signature drinks like the pisco-based LOA Neon and La Rinconada.

LOA’s recognition in the Michelin guide reflects the care taken in both the food and the setting. It is a place where the kitchen’s talent and the warmth of the room work together, offering a genuine taste of South America in the heart of Malta.
