The story
Set within the elegant Casa Ellul in the heart of Valletta, Risette is an informal fine dining restaurant that pays homage to the lady of the house. The kitchen is led by Chef Steve Scicluna, whose experience includes stints at Michelin-starred restaurants such as The Clove Club in London and Chapter One in Dublin. This pedigree is reflected in a cuisine that combines a French base with Japanese technicalities and ingredients, a modern approach that earned the restaurant a Michelin recommendation in 2026.
The menu changes weekly, driven by an emphasis on the freshest produce. Chef Scicluna’s passion for flavours is expressed through dishes that blend cultures and methods, with every protein, sauce, and garnish treated as an ode to simplicity in its most complex form. The restaurant’s philosophy is rooted in intentional sourcing: when local quality is available, it is cooked with extra pride, focusing on the prime produce of each season.
A selective à la carte is complemented by a tasting menu that showcases the kitchen’s technique. The current tasting menu includes dishes such as prawn and amberjack with grapefruit and shiso, native squid gnocchi with almond and balsamic, seabass 'en brioche' with a mussel and chorizo beurre blanc, and Iberico pork with carrot, fennel, and sauce bigarade. The meal concludes with a blood orange and pistachio tart, chocolate, and yoghurt ice-cream.
The restaurant is set under the iconic Lady of Mount Carmel Church, promising a wholesome and complete experience. The atmosphere is one of attentive detail, where the evolving house palate is consistently shared with guests. Risette is open for dinner, with a smart-casual dress code.
