The story

The kitchen works exclusively with ingredients from Ensenada and the Baja California peninsula, following the region’s fishing seasons and harvests without exception. Nothing is frozen. Everything is fresh, and the menu shifts strictly with what the ocean and land provide.
Bluefin tuna, emblematic of Ensenada, anchors the cooking. Every part of the fish is used, creating a diverse menu that is as much about sustainability as it is about flavor. Preparations are chosen to highlight the ingredient’s superior freshness — grilled over wood fire, cured with salt, served raw. The result is Mexican seafood cuisine stripped of artifice, direct and precise.
