Bruma Wine Garden is not a separate restaurant—it is the outdoor heart of the Bruma Wine Resort in Francisco Zarco, Mexico, where the celebrated Fauna restaurant extends its kitchen into the open air. Here, the same chefs who earned Fauna a place among the World’s 50 Best Restaurants bring their contemporary cooking to a garden setting, surrounded by the vineyards and hills of Valle de Guadalupe.

Chefs Rooted in the Land

The culinary team behind Bruma Wine Garden is led by Chef David Castro Hussong and Pastry Chef Maribel Aldaco Silva. David sharpened his craft at Noma, Eleven Madison Park, and Blue Hill at Stone Barns before returning to Baja to co-found Fauna in 2017. Maribel trained in Michelin-starred kitchens from San Sebastián to San Francisco. Together, they build a menu that draws from the valley’s ingredients with both audacity and warmth.

The restaurant works with trusted local farms for quail, rabbit, and lamb, and sources vegetables that arrive fresh each morning. A dedicated fisherman supplies Fauna exclusively, overseeing every step from sea to table. On-site, the team cultivates their own herbs and purifies water, honoring the valley’s resources with genuine care.
