Chef Fabiola Escobosa

Chef Fabiola Escobosa spent her childhood in Mexicali, Baja California, learning pastry from her mother, Juana. She studied gastronomy at Le Cordon Bleu in Mexico City, then worked with chef Jair Téllez before moving to New York, where she spent eight years alongside Michelin-starred chef Ignacio Mattos, helping open and run his first three restaurants. Back in Mexico, she served as executive chef for Grupo Casamata, overseeing Enrique Olvera’s restaurants. Cana is the culmination of that journey, drawing inspiration from the places she has lived and cooked: Baja California, Barcelona, New York, and Mexico City.
